Ok so here in Britain we have pancake day… Which I love! But who gets to decide when I can or cannot eat pancakes – me! That’s who!
I cook and eat gluten free pancakes quite regularly. They are so easy to make and you can add whatever toppings you want. You can have it savoury and have it will some eggs and bacon or as a sweet and add some chocolate, lemon and sugar. It’s up to you! So here is my simple gluten-free pancake recipe…
This makes 4/5 pancakes so if you want more or less just adjust the measurements.
Add 1 egg and mix. Slowly add milk (or water) to the mixture until there are no lumps. You can add as much or as little milk as you like. Everyone’s taste varies so if you like it thick have it thick and vice-versa.
Add a tiny bit of oil or butter to a frying pan so that the pancake doesn’t stick and turn on the heat.
Add part of your mixture into the pan after a few seconds use a cooking utensil to check under the pancake to see if it looks like this…
Once it does flip it, cook the other side and voila! Easy peasy!
Now I’m a simple girl and just add a little sugar, roll it up and eat. How do you eat yours?
